An array of flavors can be present in chili. Chili has a variety of spices and herbs, including cumin, chili powder, oregano, garlic, and many more. Kidney beans are ideal for chili because of their versatility. For recipes like this where I am adding a lot of flavourings, I prefer to use lean beef mince. I opt for the 5% fat mince that most supermarkets offer. If you want your chili to have a more intense flavor, add chopped onions, diced tomatoes, or a teaspoon of chili powder.

Take a tortilla and spoon about an eighth of the mince mixture down the centre. Sprinkle with an eighth of the cheese and fold over one side, then the other and place in the greased dish. If you like to cook in bulk and have freezer space, then it’s a great idea to cook a big pan of red kidney beans. Simply soak your beans overnight (this reduces the cooking time the next day). Cook them until they are soft. It will take 60 to 90 minutes to cook them if they have been soaked. Once they have cooked and cooled down, take out the quantity that you require, and then freeze the rest into portions.
